Ingredients
  

Meal Ingredients

  • 2 Cup Oil Used to Fry
  • 2-3 Lbs Pork Tenderloin Chunks
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Salt
  • 1 Cup Cornstarch Substitute Arrowroot powder (GF)
  • 3 Bell Peppers any colour
  • 2 small Onions Chopped
  • 2 Cups Pineapple Chunks

Sauce Ingredients

  • 1 Cup Sugar
  • 1/4 Cup Ketchup
  • 1/2 Cup White Vinegar
  • 1/2 Cup Apple Cider Vinegar
  • 1 Tbsp Soy Sauce Substitute (GF) option (coconut aminios)
  • 2 Tbsp Cornstarch Substitute Arrowroot powder (GF)
  • 2 Cup white rice Serve with

Instructions
 

Cooking Instructions

  • In a Skillet add oil and set to high temperature for frying pork.
  • In bowl combine pork chunks, salt, pepper, garlic and thoroughly coat with cornstarch (may need more).
  • In separate bowl whisk together sauce ingredients.
  • Cook pork in oil till golden brown and crispy. Set aside to dry (cookie rack).
  • Drain oil and sautee all chopped vegetables.
  • Stir in sauce, pineapple and pork chunks and reduce sauce till thick.
  • While reducing add Parboiled Rice and water 1 to 1 into Insta-Pot and cook for 3 mins.
  • Serve mixed together or separate.

Notes

Tip: Prepare all of the pork before you start frying and fry in batches, not all at once.
