
Sweet and Sour Pork

- 2 Cup Oil Used to Fry
- 2-3 Lbs Pork Tenderloin Chunks
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Garlic Salt
- 1 Cup Cornstarch Substitute Arrowroot powder (GF)
- 3 Bell Peppers any colour
- 2 small Onions Chopped
- 2 Cups Pineapple Chunks
Sauce Ingredients
- 1 Cup Sugar
- 1/4 Cup Ketchup
- 1/2 Cup White Vinegar
- 1/2 Cup Apple Cider Vinegar
- 1 Tbsp Soy Sauce Substitute (GF) option (coconut aminios)
- 2 Tbsp Cornstarch Substitute Arrowroot powder (GF)

Cooking Instructions
- In a Skillet add oil and set to high temperature for frying pork.
- In bowl combine pork chunks, salt, pepper, garlic and thoroughly coat with cornstarch (may need more).
- In separate bowl whisk together sauce ingredients.
- Cook pork in oil till golden brown and crispy. Set aside to dry (cookie rack).
- Drain oil and sautee all chopped vegetables.
- Stir in sauce, pineapple and pork chunks and reduce sauce till thick.
- While reducing add Parboiled Rice and water 1 to 1 into Insta-Pot and cook for 3 mins.
- Serve mixed together or separate.
Notes
Tip: Prepare all of the pork before you start frying and fry in batches, not all at once.
