Equipment

  • 1 Casserole Pan (9x13) The smaller the pan the thicker the servings, but any size will work.

Ingredients
  

  • 12 Eggs
  • 1 lb Breakfast Sausage (Jimmy Dean)
  • 1 bag Hashbrown chunks
  • 1 Cup Milk
  • 1/2 Onion (Diced)
  • 1/2 Cup Mushrooms (Diced)
  • 1 Cup Spinach (Chopped)
  • 1 TBSP Tony Chachere's Original Creole Seasoning
  • 2 Cups Mexican Cheese

Instructions
 

  • Brown Breakfast Sausage and set aside to drain fat.
  • Whisk Eggs, Milk, Onion, Tony’s, Spinach, Mushrooms, 1/2 of the cheese.
  • Spray Casserole pan with oil and place Potatoes on bottom.
  • Layer the Sausage and remaining 1/2 of the cheese.
  • Pour egg mixture evenly on top.
  • Bake until golden brown and crusty around edges. (About 40 mins)

Notes

· Eggs: Eggs act as a binder, which means they help hold the batter together.
· Milk: Milk adds moisture and keeps them tender.
