Ingredients
- 3/4 cup butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tsp pure vanilla extract
- 1 3/4 cups all purpose flour
- 3/4 tsp baking soda
- 1/4 tsp salt
- **1/4 cup multicolored sprinkles**
- 1/2 cup granulated sugar for rolling

Line cookie sheets with parchment paper; set aside
In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and sugar until pale and fluffy (5+ Mins). Scrape down the sides of the bowl and add egg and vanilla; beat until fluffy.
In a small bowl mix together dry ingredients( flour, baking soda, and salt) before adding to the wet ingredients. Beat on low speed until just starting to come together. **Add in the sprinkles until combined**.
Scoop 3 TBSP portions out and roll dough in granulated sugar before placing onto baking sheets. Leave at least 1.5 to 2 inches between each cookie.
Bake for 11-13 minutes or until the tops are beginning to crackle and the edges are a light golden color.
Remove from the oven and allow to cool for at least five minutes before devouring.
