· Eggs: Eggs act as a binder, which means they help hold the batter together.
· Milk: Milk adds moisture and keeps them tender.
· Water: Water helps thin the batter.
· Salt: A pinch of salt enhances the overall flavor.

Ingredients
- 2 Eggs
- 1 Cup Flour
- 1 Cup Milk
- 1 Tbsp Corn Oil (Mazzola)
- Pinch of Salt and Sugar
- (Optional) Served with Butter, Syrup, Fruit, Feta, Bacon, Anything…
Cooking Instructions
Temperature: Med-Hot Cast Iron Skillet
Time: 10-20 Minutes
- Whisk Eggs.
- Mix together remaining ingredients.
- To thin add water
- Heat and Grease Cast Iron pan and ladle onto center of pan (about 1/4 Cup).
- Cook till lightly brown on the bottom then flip and cook till done on both sides.
- Serve by saying Hot Hot Hot and don’t stop till they wash their plates!
