· Eggs: Eggs act as a binder, which means they help hold the batter together.
· Milk: Milk adds moisture and keeps them tender.
Ingredients
- 12 Eggs
- 1 lb Breakfast Sausage (Jimmy Dean)
- 1 bag Hashbrown chunks
- 1 Cup Milk
- 1/2 Onion (Diced)
- 1/2 Cup Mushrooms (Diced)
- 1 Cup Spinach (Chopped)
- 1 TBSP Tony’s
- 2 Cups Mexican Cheese
Cooking Instructions
Temperature: 350
Time: 40 Minutes
- Brown Breakfast Sausage and set aside to drain fat.
- Whisk Eggs, Milk, Onion, Tony’s, Spinach, Mushrooms, 1/2 of the cheese.
- Spray Casserole pan with oil and place Potatoes on bottom.
- Layer the Sausage and remaining 1/2 of the cheese.
- Pour egg mixture evenly on top.
- Bake until golden brown and crusty around edges. (About 40 mins)
