Delicious family recipe that can be served with anything and are super easy to make.

· Eggs: Eggs act as a binder, which means they help hold the batter together.
· Milk: Milk adds moisture and keeps them tender.

Ingredients

  • 12 Eggs
  • 1 lb Breakfast Sausage (Jimmy Dean)
  • 1 bag Hashbrown chunks
  • 1 Cup Milk
  • 1/2 Onion (Diced)
  • 1/2 Cup Mushrooms (Diced)
  • 1 Cup Spinach (Chopped)
  • 1 TBSP Tony’s
  • 2 Cups Mexican Cheese

Cooking Instructions

Temperature: 350

Time: 40 Minutes

  1. Brown Breakfast Sausage and set aside to drain fat.
  2. Whisk Eggs, Milk, Onion, Tony’s, Spinach, Mushrooms, 1/2 of the cheese.
  3. Spray Casserole pan with oil and place Potatoes on bottom.
  4. Layer the Sausage and remaining 1/2 of the cheese.
  5. Pour egg mixture evenly on top.
  6. Bake until golden brown and crusty around edges. (About 40 mins)
